By Cristie Will

1-pound Beefground
½-teaspoon Sal
t ¼-teaspoon Ginger
1-large Egg, beaten
1-teaspoon Water
¼-cup Flour
3-tablespoons Vegetable oil
16-ounces Pineapple chunks, canned with syrup
¼-cup Vinegar
2-tablespoons Cornstarch
¼-cup Brown sugar, packed
1-tablespoon Soy sauce
2-medium Green bell peppers, seeded & cut into strips
1-pound Egg noodles, cook according to instructions
2-tablespoons Butter, (melt over cooked, drained noodles)

Season beef with salt and ginger; form small meat balls; dip into egg beaten with water, and roll in flour. In large frying pan sauté meat balls in oil, brown all sides; remove balls from pan. Using same pan add bell pepper strips, pineapple chunks and the syrup it came in, stirring in brown sugar, corn starch, vinegar and soy sauce. Heat, stirring constantly until it thickens. Add meatballs into mixture and mix well. Cover and simmer for 10 minutes or until heated thoroughly. Serve over hot buttered noodles.

Serves 4

Note: Sometimes I add chopped nuts to this and it just gives it that extra crunch. It’s really good if you love nuts.
